Traditional gazpacho is a cold and creamy emulsion of Spain’s most basic ingredients: olive oil, garlic, tomatoes, cucumber, bell pepper, bread and plenty of tangy vinegar and salt. Usually you serve this with a plate of tropezones, or finely chopped garnishes like minced onion, cucumber, and dry bread that people can add to their bowls as they wish. But to me, there is nothing better than drinking it straight from the glass. For a fast weeknight meal, we like to whip up a tortilla, a frittatalike egg dish cooked in olive oil to which you can add whatever vegetables you’d like. While tortilla de patatas is the most traditional, asparagus is also a popular choice — and it’s my favorite. Serve this with a salad of romaine lettuce and white onion with a simple vinaigrette and you’ll see why the simple flavors of Spanish food can be so divine.

“It’s a really magical image for the audience,” White said. “It’s super amazing to work with water. It’s also hard when you go upside down in the rain, so you have to find ways to not have water in your eyes, (but) it’s really fun and it’s different.”. It’s the artist’s first show with Cirque.
